We use techniques passed down through the ages, such as baking some items in a wood-fired oven to achieve an authentic flavor profile. Every pastry is layered with care, and syrups for our desserts are made in-house to preserve the authenticity of Balkan sweets.
Wherever possible, we source ingredients that are staples in Balkan baking—such as fine filo dough, rich feta cheese, and aromatic spices. When sourcing locally, we ensure the ingredients meet our high standards of freshness and quality.
Each item is made by hand, ensuring the perfect balance of texture and flavor. From rolling out delicate filo dough for pastries to hand-shaping loaves of lepinja, we embrace traditional Balkan methods that have been refined over generations.
